You can do this with Facebook pages, but Instagram seems to have more restricted privilege options—am I missing something?

Instagram does not natively allow you to add an admin who can post content but not access messages directly through its app or site. Alternatively, you can use Meta Business Suite to manage your Instagram account. Setting up your Instagram account through Meta Business Suite allows you to assign roles with specific permissions. This way, you can control what each admin can access and manage.
